Stuffed Green Pepper Soup - From Karen In Girard, PA

Ingredients: 
1 pound lean ground beef; 
1/2 pound lean ground pork sausage (lightly seasoned with sage or use sweet Italian); 
1 large onion (about 1 cup) diced fine; 
one clove garlic, smashed and chopped fine; 
2 cans beef broth; 
1-1/2 quarts (48-oz.) canned tomatoes (squeeze them with your hand as you add them to the pot);
16 ounces tomato juice (you can substitute V-8 Juice for a little zing); 
1/4 teaspoon basil; 
1/4 teaspoon oregano; 
1/4 teaspoon paprika; 
salt and pepper to taste; 
2 cups cooked rice; 
3 or 4 large green peppers (cut into small squares); 1 can tomato soup; 
1 cup water.

Method: 
Sauté ground beef, ground sausage and onion in large frying pan until meat is browned; drain off any grease.  Add other ingredients except peppers, rice, tomato soup and water.  Place lid on pan and
simmer for 15 minutes.  Add peppers, rice, tomato soup and water to rest of mixture.  Simmer 1 hour.  Makes about 3 quarts.

Sweet and Sour Red Cabbage - From Louise-Jane in Utah
Dice 4 slices of bacon and pan fry until crisp. Stir in 6 tablespoons of brown sugar, and cook for 1-2 min. stirring. Add 2 chopped onions, 1 red
cabbage shredded, 1 tart apple diced. Cook for 5 min. Add 1 cup red wine, 2 tablespoons red wine vinegar, 1/3 cup golden raisins, 2 teaspoons caraway seeds, 1/4 teaspoon cinnamon, pinch of nutmeg, salt and pepper to taste. Cover and simmer for 30 minutes. Stir in 2 more tablespoons of brown sugar and 2 more tablespoons of red wine vinegar. Serve!!

Brown chicken breasts (four or five). Take out of pan and put in a can of Broccoli Cheese soup. Add a cup of milk to the soup and heat, stirring to make smooth. Add the chicken breasts to the soup mix and cook until tender. It's easy and very good.

Beer Bummed Chicken - from Sandy
Take one can of beer, pour off about a 1/3 of it (your DH will help you out by drinking it!) Insert can in open end of chicken( i.e. the bum) Put on your grill at medium heat. Can and two legs form a tri pod. Place in in grill with legs and can resting on grill.Cook it about 1 1/2 hrs.  No joke, it tastes great and I don't even like beer! 

Crispix Mix Sweet Minglers - from Susan White

1 cup semi-sweet chocolate chips
1/4 peanut butter
1/2 cup peanuts (optional)
6 cups Kellogg's Crispix cereal (or Chex cereal)
1 cup powdered sugar

Melt chocolate in microwave. Stir in peanut butter and peanuts. Gently stir cereal into mixture until well coated.  Place powdered sugar in a large
Ziploc bag, add cereal mix, close bag and shake gently until mixture is well coated.  Store in the fridge.

HOT TAMALE BALLS - from Diane in Louisiana

1# ground beef 
1# roll pork sausage 
1 1/2 C corn meal 
1/2 C flour
1 Tlbs chili powder 
1 Tlbs cumin
Large can of Tomato or V-8 Juice
Pour 3/4 C of juice into meat mixture
4 cloves garlic, crushed
2 tsp. salt
1 tsp. cayenne (or less)
 

In a 5 or 6 quart Dutch oven simmer the following while making balls:
Balance of the V-8 juice
2 tsp. salt
1Tlbs Chili Powder
1 Tlbs Cumin
3 or 4 crushed garlic cloves-optional
1 onion sliced or cut-optional

Mix all of the first set of ingredients and make small balls, like cocktail meatballs.  Place raw balls into simmering pot as you roll them.  When all the balls are rolled and in the pot, add enough water to cover balls. SIMMER for 2 hours, stirring occasionally.   ENJOY

Freezes Well!

Hint!  To make these a meal, I fix Jambalaya and if you wish, corn, and serve together.

tomato, patato soup. - from Eileen 
5 or 6 med patatoes
med onion
parsley, salt , pepper
1 can of crushed  tomatoes or fresh tomatoes

Cook the patatoes until most of the water is almost gone, maybe just covering the patatoes. Add the tomatoes and simmer for a few minutes.
It is very  simple and very good.
Dh puts velveta cheese in his and I eat mine plain. Enjoy.

Banana Nut Bread - from Judy Meyer

2 cups all-purpose flour
1/2 teaspoon salt
1 teaspoon baking soda
1/4 pound butter (I don't substitute margarine in this recipe)
1 cup sugar
2 beaten eggs
3 medium bananas, mashed (about 1 cup)
1/2 cup sour milk (or 1 tablespoon lemon juice in 1/2 cup milk; let sit
till curdled)
1/2 cup pecans or walnuts, chopped

Preheat oven to 350.  Cream butter and sugar; add eggs. Mix in dry ingredients alternately with bananas and milk.  Add nuts.  Pour into greased and floured 9" x 5" loaf pan.  Bake for 70 minutes (rack below center of oven), or until cake tester inserted in center of loaf comes out clean.

Prairie Fire Party Dip - from Marsha

4c. dry pinto beans, cooked 
1/2 pound butter 
4 jalapeno peppers 
1 tsp. jalapenp juice, to taste 
1 clove garlic 
2 Tbs. minced onion 
grated cheddar cheese 
corn chips, or Fritos, etc. 

Cook beans, after checking beans for debris, reserve cooking liquid.   Blend all in a food processor, using reserved bean liquid.  Increase jalapeno juice  amount Very slowly, it gets Hot quickly.  Mixture should be semi-thick, not too thin, adjust bean liquid slowly to achieve correct 
thickness.  Serve in fondue pot, or chafing dish, over low heat to keep warm.  Top with grated cheddar cheese, and serve with corn chips.  Makes enough for 2 parties, freeze 1/2 for later. 

You can start with 2 l-pound cans refried beans, and proceed as above, using water to thin to correct consistency.  It will thin out somewhat when heated, so don't get too thin. 

LEMON BARS - from Jane in Indy
Jane Carlson & Jane Crosier
2 c flour 
1/2 c confectionery sugar
1 c butter 
4 beaten eggs
2 c granulated sugar 
1/3 c lemon juice
1/4 c flour 
1/2 t baking powder
Sift together 2 c flour and confectioner’s sugar.  Cut in butter until mixture clings together.  Press into 13 x 9 x 2 pan.  Bake at 350° 20 -25 
min. or until brown.  Beat eggs,  granulated sugar and lemon juice.  sift together 1/4 c flour and baking powder.  Fist into egg mixture.  Pour over 
baked crust.  Bake 350° 25 min longer.  Sprinkle with additional confectionery sugar.  Cool Cut into bars.

Mulled Cider - from Anne in CO

Put 3-4 cups of cider in pan on low. throw
in 6-12 allspice(whole and depends on how fresh they are), 6 whole cloves, and 1-2 sticks of whole cinnamon ( again depending on stick size and freshness).  Let this heat and drink by the cup or mug.

Pumpkin Cheesecake - Karen in Girard, PA

Crust:       1/4 cup margarine or butter
                1-1/2 cup baking mix (Bisquick)
                2 tablespoons sugar

Middle:     1 8-oz pkg cream cheese
                3/4 cup sugar
                2 tablespoons flour
                1 teaspoon cinnamon
                1/4 teaspoon each of nutmeg, ginger and salt
                1 teaspoon vanilla
                3 eggs
                1 16-oz can pumpkin

Topping:    1-1/2 cup sour cream
                3 tablespoons sugar
                1 teaspoon vanilla

Heat oven to 350 degrees.  Cut margarine or butter into baking mix and sugar until it resembles fine crumbs.  Put into bottom of a 9x9x2 pan, bake 10 minutes.  Mix cream cheese, sugar and flour in a bowl until creamy.  Mix in the spices and pumpkin.  Spread onto crust and bake until knife comes out clean, approximately 55 minutes.  Mix sour cream topping and spread on top and bake 5 additional minutes.  Cool at
least 4 hours.  Makes about 12 servings. 

cheese ball. - from Judy in NW Ohio
1 pkg. cream cheese - softened
1 tbs. A1 Steak Sauce
1/2 c. Parmesan cheese
1/2 c. green olives (sliced)
1 small pkg. dried beef (chopped into small pieces)
Soften cream cheese, add A1 and Parmesan cheese. Mix well until all is blended. Add olive slices and and part of the dried beef. 
Shape into a roll or ball. Cover with remaining dried beef.
Best if is sets for a day or two.

Old World Sausage & Beer Soup - from Nan in the Snoqualmie Valley

1# turkey sausage links, cut into 1/4 slices
3 c water
1 (12oz) can beer
1 (1oz) pkg dry onion soup mix
2 c shredded cabbage
1/2 c brown rice

In large saucepan, cook sausage over med high heat f/5 minutes or until browned.  Drain any fat away.

Add water, beer and soup mix; mix well.  Bring to a boil.  Add rice; cook until almost tender, then add cabbage.  Cook just until cabbage is cooked to your preference.

5 (1 1/2c) servings

Note:  This is untested; I plan to double it!  No sense making a pot of soup
unless you can get at least two meals from it, and my guys loooove soup.

Applesauce Pecan Bread - from Elaine In WA

1 cup unsweetened applesauce
3 tbsp. butter, melted
1 large egg
1 tsp. salt
1/3 cup brown sugar, packed
4 cups bread flour
1 tsp. cinnamon
1/4 tsp. cardamom
1/2 tsp. baking soda
3/4 cup chopped pecans (can use walnuts or hazelnuts too)
2 tsp. active dry yeast

Measure and add ingredients to bread pan in order listed. Select sweet bread setting. If you don't have a sweet bread setting, it still works fine in regular white bread setting (3 hour cycle).  Start the
machine and go quilt. When bread is done, slather with butter and serve with hot tea!

Blitzkuchen - From PhabDianeJane in NYC

1-1/2 C. sugar
4 Tblsp. shortening
4 eggs (separated)
1/2 tsp. salt
1 tsp. vanilla
1/2 tsp. almond extract
1 C. milk
2-1/4 C. flour
2 tsp. baking powder

Cream shortening with sugar, add beaten egg yolks. Mix flour and baking powder. Add milk and flavoring alternately with dry mix. Fold in beaten egg whites last. Pour into two  9" round or oblong greased tins.

Top with streusel -
1 C. lt. brown sugar
1/4 C. butter
2 Tblsp. flour
Sprinkle with chopped pecans. Bake at 375 - 30 minutes.

Alice' Sour Cream Coffee Cake - from PhabDianeJane in NYC

1 C. butter
2 C. + 4 tsp. sugar
2 eggs
1 C. sour cream
1/2 tsp. vanilla
2 C. flour
1 tsp. baking powder
1/4 tsp. salt
1 C. chopped pecans
1 tsp. cinnamon

Preheat oven to 350.

Cream butter and 2 C. sugar together till very light and fluffy. Beat in eggs, one at a time, mixing well. Fold in sour cream and vanilla.
Fold in flour sifted with baking powder and salt.
Combine 2 tsp. sugar, pecans and cinnamon.
Place about 1/3 of batter in well-greased and floured bundt or 9" tube pan. Sprinkle with 3/4 of pecan mixture. Spoon in remaining batter, sprinkle with remaining pecans. Bake at 350 about 60 min. or till done. Cool.   Serves 10-12
 
Mottes cake - from Ingrid in Denmark
60 gram almonds
4 only the white from eggs
125 gram florsugar ( kind of white sugar one also use for glasur)
2 teaspoonfull potatoflower
-------------
Inside the cake and un top :
4 deciliter whipped cream 
about a tablespoon full instant coffee 

Cut the almonds in little pieces,whip the white from the eggs very stiff
mix the sugar,almonds,potatoflower in the whipped from the eggs.
Do from this two cakes flat on bakingpaper (round ones)
Bake in the ofen 20 -25 minutes about 180 degrees.
Let them be cold.
Whipp the cream,mix with instant coffee,put in between the two cakes and un
top.
